I went a little crazy with pie crusts one Sunday when I made a spinach and mushroom quiche and a Tourteau de chèvre. Both were from Dorie Greenspan’s fabulous cookbook Around My French Table. I obviously did not brown my cake enough, but it was still yummy. The quiche was loosely adapted from one of her recipes. I had gotten mushrooms and spinach from my CSA that week, so what else is a girl to do but make quiche?
